Instructions:

Preheat your oven to 350°F (175°C). Grease a baking dish and set aside.

In a skillet over medium heat, cook the ground sausage until it’s no longer pink. Remove the sausage from the pan and set aside.

Using the same skillet, sauté the chopped onions and celery in the sausage drippings until they are soft and translucent, about 5 minutes. Add minced garlic and the sliced mushrooms and cook for another 2 minutes until fragrant.

In a large mixing bowl, combine the dried-out crumbled cornbread, cooked sausage, sautéed onions, celery, mushrooms, and garlic. Add chopped parsley, sage, dried thyme, black pepper, and salt. Mix everything together until well combined.

In a separate bowl, whisk together the chicken or vegetable broth, melted butter, and beaten eggs.

Gradually pour the liquid mixture over the cornbread mixture, stirring gently to combine. The cornbread should absorb the liquid and become moist but not overly soggy.

Transfer the stuffing mixture to the prepared baking dish. Cover it with foil and bake for 30 minutes. Then, uncover and bake for an additional 15-20 minutes or until the top is golden brown and crispy.

Remove the stuffing from the oven and let it cool for a few minutes before serving. Garnish with fresh sage leaves for a festive touch.
