Fun Popsicle Spritzer

It isn’t a secret that summer is my favorite season and boozin it up my favorite past-time. So I’m very happy to share with you this Lazy Booze Recipe. There are a few different ways to put together your Popsicle Spritzer and each one tastes as good as the last.

First, it is all about the popsicle! You can be extra lazy and just do a store-bought version. If you go that route I’d select the fancy natural fruit popsicles and not the cheap kool-aid ones that are for kids. This is probably the route I take most often because it’s easiest and there isn’t anything wrong with that.


How To Make a Homemade Fruit Popsicle

Make your own fruit popsicle | the simplified version

For this, you will need a popsicle thingy also known as a homemade popsicle mold. The perk to making your own popsicles is that you can decide on the fruit and juice base.

Since this is going in a cocktail I’d recommend doing a lemonade or limeade base.

  • Cut the fresh fruit into pieces. I like using fresh strawberries and kiwis together
  • Layer your lemonade or limeade base and fresh fruit into the popsicle mold
  • Freeze your popsicle mold for 6-8 hours or until completely frozen

Some other good fruit combinations that would go great together are pineapple, papaya, and mango, which would create a tropical vibe, or try raspberries, blueberries, and strawberries for a red-berry fruit vibe.


Prepare your Drink

Once you’ve decided on a type of popsicle everything is downhill from there. I like to use a stemless wine glass for a fancy boozalicious look. Place your frozen rock-solid popsicle in the glass and pour a shot.. or two of either rum, vodka, or gin. Then fill up your glass with sparkling soda, sparkling wine, or champagne.

If you’re like me and can only tolerate sparkling soda in small amounts and you like a bit of a sweeter flavor then add half sparkling soda and half ginger ale. It is really tasty I’m not gonna lie…


TIP: If you need to bang out a cute cocktail in a hurry you can swap the popsicle for a scoop of lime sherbert. I’ve done it and it’s really good.
